Los tonos naranjas y marrones invaden nuestros campos y cocinas. Los nuevos productos de temporada apartan el mel\u00f3n y el tomate, y dejan paso al boniato y la casta\u00f1a. Las frutas y verduras son m\u00e1s contundentes y menos refrescantes. Son de colores m\u00e1s fuertes y anaranjados, esto es por la presencia de los pigmentos con antioxidantes, que nos ayudar\u00e1n a preparar el sistema inmunitario para la estaci\u00f3n m\u00e1s exigente del a\u00f1o.<\/p>\n<p>As\u00ed pues, junto a las conservas que hemos ido preparando este verano, pondremos el membrillo y la quema de casta\u00f1as. Hoy le traemos tres recetas de oto\u00f1o, para aprovechar al m\u00e1ximo los productos de temporada y disfrutar de su color y su sabor. Os lamer\u00e9is los dedos! Estas recetas nos llegan de los amigos de la cocina de M\u00f3ra d'Ebre, en su \u00faltimo taller elaboraron estas recetas dedicadas a oto\u00f1o. En el taller cocinaron: un primer plato, que consta de una crema de calabaza, un segundo plato que se trata de un conejo a la sidra y para terminar un pastel de casta\u00f1a. La <strong>calabaza<\/strong> de oto\u00f1o, de piel m\u00e1s dura, nos aporta gran cantidad de fibra soluble. Sofre\u00edmos un puerro (tambi\u00e9n nos sirve una cebolla).<\/li>\n<li>2. A\u00f1adimos la calabaza pelada y troceada, y alg\u00fan trozo de manzana (mejor \u00e1cida).<\/li>\n<li>A\u00f1adimos sal y pimienta, al gusto.<\/li>\n<li>A\u00f1adimos agua, lo llevamos a la ebullici\u00f3n hasta que veamos que est\u00e1 bien cocida (podemos pinchar con un tenedor la calabaza, si \u00e9sta se clava, significa que est\u00e1 bien cocida).<\/li>\n<li>A\u00f1adimos un poco de curry.<\/li>\n<li>Trituramos todo con una batidora y a\u00f1adimos un poco de crema de leche al gusto, para que nos quede m\u00e1s suave.<\/li>\n<\/ol>\n<p>P.D: Dependiendo de la consistencia que queramos que tenga la crema, meteremos m\u00e1s o menos agua del caldo en el que lo hemos hervido.<\/p>\n<p>Para el siguiente plato, utilizaremos como ingrediente principal, el conejo, la manzana y los membrillos.<\/p>\n<p>La <strong>manzana <\/strong>tiene un alto contenido en agua, fibra y elementos llamados flavonoides con propiedades antioxidantes. Esta fruta refrescante nos aporta pocas calor\u00edas. Cuando la cocinamos, la manzana produce una substancia llamada pectina, que tiene afectos estringentes.<\/p>\n<p>El <strong>membrillo <\/strong>es una fruta t\u00edpica del oto\u00f1o, con bajo contenido en calor\u00edas y az\u00facares. Esta fruta no la podemos consumir cruda, por tanto, esta receta es ideal para introducir esta fruta en nuestra dieta. Nos aporta fibra, potasio y taninos.<\/p>\n<p>El <strong>conejo <\/strong>nos aporta prote\u00edna de alta calidad. Dorarlas con una sart\u00e9n con un poco de mantequilla. Mezclamos el chocolate y la mantequilla a fuego lento.
